Christmas Tamal

Enough for : 24 people

 

Ingredients:

 

1 kilogran of pork skin.

1 kilogram of corn seeds.

1 kilogramof pork meat.

6 sweet peppers.

½ kilogram of mustard encurtido (mixed vegetables with mustard).

½ kilogram of mashed potatoes.

3 cans of petit-pois.

¼ kilogram of potatoes.

5 carrots.

At your will:

Celery, Coriander, orégano, thyne, Lizano Sauce, garlic, onions, Green Banana Leafs.

2 cups of rice.

 

Process: .

The Leafs must be cleaned and cut.

Cook all the meat and pork skin with lots of condiment.

The corn seeds must be cooked and grinder, then add the meat's juice, some extra condiments and mix very well.

The white rice must bee cooked with condiments such as onion, celery, coriander, sweet pepper, garlic..

The carrots must be cut in slices, and some meat juice, achiote, lizano sauce and curry should be added,

To "build" the tamal, you should place the Green Banana leafs as follows: A large pice on the bottom, and  a smaller one on top. Then you place a tablespoon of dough, on top a spoon of the just cooked rice, some sweet pepper, potatoes, petit-pois, pork meat, and pork skin, etc.

Once everything is poores, begin to close the tamal by folding the ends of the leafs and then bringin them to the inside of the tamal, and start tieing them in couples.

The tamales should be cooked in boiling water for about an hour before serving. They may be kept frozen.
